A BIT-E OF MYSELF

WHO: It depends on who you ask and when you ask them, but at any given time I am a teacher, a student, a comedian and a world traveler. I am Mario Maggi and I'm the Executive Chef at Credo. (www.credosf.com)

BIO: I never wanted to become a chef. I knew, after watching my father toil in some of Europe's finest kitchens, that a chef's life was full of sacrifice and struggle. Still, it's not easy to change your true destiny. During my career I've launched, run, owned and operated more than 30 restaurants in 10 countries around the world.

WHY THIS BLOG? My motivation in life has been to share my passion for food with the world, and this blog is significantly cheaper than airfare. For me, food is a universal language that allows us to interact along the same plane - as humans, full of quirks and experiences that make us interesting. So goes "Culinarily Incorrect," imperfect recipes and thoughts expressed by an imperfect - but authentic - Italian chef.
